Wow, this has been a year let me tell you! I can’t believe my baby N is going to be ONE this month…and Thanksgiving is this weekend. I feel like I’m flying by the seat of my pants. Pretty soon I’ll blink and be wondering how it’s two days to Christmas and I have nothing done/bought/made. I’m so thankful for my family, for my husband’s new job, for my very good online friends who are quickly becoming offline friends. Our life is good. Hectic but good.
What are you guys making for dinner this Thanksgiving? We don’t really have any traditions yet for Thanksgiving but the whole Turkey thing seems overboard when it’s just the 4 of us. I don’t really enjoy a traditional ham so I’m thinking we might do a beef roast. I love a good beef roast! I’m going to read up at Urban Moms who’ve teamed up with Hunts to create Thanksgiving side dishes that are easy to prepare using pantry staples.
If you go to Urban Moms you can check out the recipes and comment on who created the best dish! The Potatoes Pomodori au Gratin look amazing and I think they’d go wonderfully with a beef dish.

You all know how I worship my slow cooker and if you don’t have one you’ll want to go enter – it will change your life. I’m not kidding! We make chili in it on an almost weekly basis (Hunt’s tomatoes, some ground beef, onion, green pepper, chili powder, brown beans, kidney beans and voila!)

Yum!! I do the whole turkey for 4 well, typically 3 of us because Jillian doesn’t partake. :p I am a sucker for a good turkey and can’t wait until Sunday. I think I’ll try this the next time I make a roast! Thanks, Heather!

We usually eat whatever. I’m the only one who truly enjoys a turkey dinner and all the trimmings. Since turkey is so easy to make, and there’s only 4 of us as well, it’s not unheard of for me to make some stuffing, mashed potatoes, a veg, and a turkey breast on any old night when I decide I want turkey and taters.
I do enjoy eating turkey…don’t get me wrong
We have the same food every Thanksgiving and it is what my mom has made since I can remember and probably long before I even came along. There will be 23 of us all home for Thanksgiving, so we will at least have one turkey, probably 2.

I used Hunts diced tomatoes all the time for when I make Goulash. Good stuff.

I do a whole turkey for the 4 of us but then I take the left overs and break it down into other meals. After freezing we then get to enjoy Thanksgiving throughout the year.
We are going to have a full turkey dinner! I love turkey and really should make it more often then JUST thanksgiving. We never have to fight over eating the left overs, every one wants them!
