Cinnamon Apple Granola Cake
  • ¼ cup oil
  • 1½ cups sugar
  • 3 eggs
  • 2¼ cups flour
  • 1 tsp salt
  • 3½ tsp baking powder
  • 1½ cup milk
  • 1 tsp cinnamon
  • 3 apples (sliced)
  • 4 tbsp brown sugar
  • 1 cup granola of your choice
  1. Heat oven to 350F. Grease bundt pan or 8" round pan.
  2. In the bowl of a stand mixer whisk oil, sugar and eggs. Beat well until light in color.
  3. In separate bowl, mix flour, salt, baking powder. With Mixer off, add dry ingredients to mixer bowl, also add in milk. Beat batter until well mixed and airy about 3 min.
  4. Pour ⅔ of the batter into cake pan. Top with ½ brown sugar, layer in the apple slices and remaining brown sugar. Next, mix the remaining batter with approx 1 cup of granola (I used Safeway's Open Nature granola with cranberries and slivered Almonds) and pour over top of the apples and sugar making sure to spread evenly to cover apples.
  5. Bake until a toothpick comes out clean (approx 45 min for a bundt cake)
