Breakfast Hash – Paleo, Grain Free
  • 1 Zucchini
  • 5 Mushrooms
  • 1 Handful Spinach
  • 2 slices Prosciutto or other ham
  • 1 splash Olive Oil
  • Pepper to taste (ham is salty so I don't add salt)
  1. Heat a skillet with a dollop of Olive Oil. Add your ham, mushrooms and zucchini and saute until veggies are soft. Throw in your spinach and toss to coat with oil. When spinach is wilted you're ready to eat! If you want to add goats cheese I usually do so with the spinach so it can melt a little. A little swiss grated over the top would be nice too!
