It’s winter and it’s snowy and cold and we’ve been through turkey season. It’s time to shake things up a little. Literally. This is a pretty basic salad but the addition of granny smith apples brings a tart crunch that wakes the senses. The dressing is so simple to make. Just toss things into a mason jar, screw on the lid and give it a shake.
I put this salad together with a Cauliflower and Parsnip soup and the combination was heavenly. Smooth and creamy on one side / crisp and fresh on the other. We sipped and crunched, stirred and nibbled and even though we skipped meat for the meal, we were all quite satisfied. I neglected to add the pecans in prior to snapping this photo….pretend they are there okay? They were best friends with the apple pieces and really added some substance to the salad.
You could use the dressing on whatever greens and salad accoutrement are your favorites but I used:
- romaine lettuce
- cucumber
- celery
- green apples
- pecans
- and a few grape tomatoes for color
