I get so bored of the same things over and over and over but when we’re in a time crunch we usually tend to go for what we can put together without thinking. My contribution is the most delish hot broccoli and chicken salad – you won’t even believe how comforting it is until you try it. Had a bad day? Make this. This is one of those things that I toss together when I have leftover chicken in the fridge and only 15 min to get it yummy and into my tummy. It is also one of my fav things to eat ever – it’s SO AMAZING. Bacon will do that. This isn’t the best photo, I really was in a rush when I made this and I snapped a pic with my phone because I didn’t want to forget how much I liked it. I’ve had it oh….1000 times since then. This is naturally gluten free and paleo too with lots of veggies, fats and protein. It’s a great healthy go-to, time saver AND leftover chicken recipe so you pretty well can’t go wrong here. Trust me. Try it.
A quick and easy weeknight meal that you’ll love! Fry bacon until crisp, remove and set aside leaving 1-2 tbsp of fat behind in the pan Add the broccoli and mushrooms and saute until bright green and about halfway cooked (4-6 min) Add the chicken, cashews, crumbled cooked bacon and cook until broccoli is cooked. Remove from heat and stir mayo through. Serve.

This is a great gluten free dinner recipe for changing up depending on what you have on hand. It’s a hot salad so any salad type stuff works well. I like cherry tomatoes, sunflower seeds, carrot, peppers – anything goes! I try to make extra chicken when I’m using it for other recipes just so I can make this salad with the leftovers – it’s so quick to put together if you have your chicken already cooked. If you didn’t have chicken ready to go, you could toss it in the oven to bake while you ran around doing other things, or you could saute some if you had the 10 min to devote to the task. Either way, try this. You won’t regret it!
