My sister and my father both have Celiacs. It means they have to eat a gluten free diet. Last time I was at home, my mom was frustrated with her lack of dinner options as almost everything includes flour. She was wanting to make fish, fried fish. But how do you make fried fish without flour? We jumped on the net and found two options. Corn Meal and Instant Potato flakes. We decided to try both and see what worked best. The Corn Meal was just gross. Ewww. The Potato Flakes were surprisingly good! I even liked it better than a heavy batter or flour coating. And the best thing is it’s super quick and easy.
I’ve continued to use this method at home now even though none of us have celiacs just because it’s so fast, simple and tasty.
A couple days ago I even used them on chicken for chicken fingers. I didn’t even use egg, just made sure the chicken was moist enough for the flakes to stick. So easy! The only thing you need to do is season your meat well because the flakes are pretty bland. A little salt and pepper fixes that right up. I’ve not tried this on beef yet, if you do pop by and let me know how it worked.
I’m not even sure I know what a gluten is. I imagine I’m eating them, though.
Wow, that sounds like a great alternative. Our family doesn’t have any issues with gluten, but I still love trying out variations on a theme. Thanks for the tip!

Thanks so much for this. My son has autim so a gluten-free diet is recommended. iHowever, it is so dificult to maintain so i kind of gave up. this will help me jump start it again!

I make my own bread crumbs in a food processor; I know it sounds nerdy but it’s a way to use up the tail ends of grains and crackers instead of throwing them away. I use whatever’s hanging around in the freezer or pantry, including not-too-sweet cereal, wheat crackers (sorry, gluten), oatmeal, cream of wheat (gluten again). Then I add some spices and put it in a container. The cereals and oatmeal make it interesting.

excellent idea for breading.. I’ll have to check and see if potato flakes are dairy free too, probably not but if they are I’m trying this!!!!
I use potato flour all the time and my daughter drinks a Dari-Free ‘milk’ that is potato based.
