I’m not exaggerating. Nope. I’ve had waffles and I’ve had gluten free waffles and it’s usually easy to tell the difference between the two. But not this time folks, you’d be hard pressed to guess that these crisp on the outside and soft on the inside waffles are gluten free but they are! The secret to any great waffle is to separate and whip the egg whites and fold them into the batter at the end. This gives the batter a light and fluffy consistency but what I love about this recipe is that the oat and almond flours provide some nutrition to a breakfast item that’s usually pretty void of anything good for you.
I do not sweeten my waffle batter because we love to top them with sweet stuff like maple syrup or strawberry rhubarb jam, but you could add a little sugar if you wanted to.
Breville sent me their No Mess Waffle maker and I thought, yeah right, no mess. I’m the queen of messes and if there’s a way for me to make a mess I will find it. But look at this, when I get lazy and don’t measure out the batter, when I eye ball it and put too much in – look what happens? It goes into this little moat and it even gets cooked there! We love these gluten free waffles even more than the standard sort! The almond flour makes them filling and nutritious. Mix dry ingredients in a large bowl. In the bowl of a stand mixer, whip the egg whites until firm In a medium bowl, mix eggs, oil and milk. Add wet ingredients to the dry and whisk until no lumps are left Fold egg whites into the batter with a spatula Add a 1/2 cup of batter to preheated waffle maker (I used setting 4) Close the lid and let cook until golden brown Keep waffles in warm oven as you cook the rest of the batter, I set mine on a paper towel lined cookie sheet to prevent them from getting soggy.

It’s worth noting that I do not use any sort of oil or cooking spray on the waffle iron. The non-stick coating does it’s job just like it’s supposed to. As appliances go, a waffle iron is a pretty simple one. But if not executed well, it would be pretty useless. Either it does a good job or it’s fit for the trash.
