Breakfast is often my hardest meal of the day. I’m sleepy and grouchy and would love to just sit down to a big fat cinnamon bun and cup of coffee. No such buns are happening for me as I’m working on making my buns decrease in size. The alternative is well, eggs. I eat eggs most mornings and I love eggs so this is often ok for me. But there needs to be an eggy alternative for days where I just don’t want another egg dish.
Enter the breakfast hash! Mushrooms, Zucchini, Spinach and Prosciutto. You could use a nice preservative free ham instead. This dish is simple to make, healthy beyond all means, low carb, grain free, filling and TASTY! Only a little thought needs to be used in order to make sure I pick up these ingredients at the store.
The veggies can be cut up the night before. Often I’ll cut up my breakfast veggies when I’m cooking dinner and already working in the kitchen with a cutting board out. But I’ve chopped them in the morning too and it really doesn’t take too long.
The idea behind this recipe is that you can add in whatever you like, whatever you have on hand. It’s pretty versatile. No zucchini? Leave it out. Add in some goats cheese if you have some. Season it however you like – Garlic? Green onions? Lemon Pepper? YUMMY!
- 1 Zucchini
- 5 Mushrooms
- 1 Handful Spinach
- 2 slices Prosciutto or other ham
- 1 splash Olive Oil
- Pepper to taste (ham is salty so I don't add salt)
- Heat a skillet with a dollop of Olive Oil. Add your ham, mushrooms and zucchini and saute until veggies are soft. Throw in your spinach and toss to coat with oil. When spinach is wilted you're ready to eat! If you want to add goats cheese I usually do so with the spinach so it can melt a little. A little swiss grated over the top would be nice too!

That looks delicious. I’d only make one change: I’d douse that plate in hollandaise. Is that still paleo? Haha. It’s surely not healthy that way!
