Most of the time, finding foods to eat and share with a crowd that are also gluten free isn’t super hard. Cheese, salami, olives, salsas, chips and so much party food is naturally gluten free. But if you’re like me, and putting a spread out on the buffet for people to nibble on, you’ll feel that a bit of festive bread is nice. And it’s just not ok to slap a loaf of gluten free sandwich bread on the island and call it done. Sandwich bread is not for parties. Sandwich bread is not for dipping in oil and vinegar. Sandwich bread is barely ok for sandwiches – you know what I’m talking about. It’s not so great.
And I also want something simple and quick to make because who has time for yeast to work when you are trying to get ready for a crowd to arrive? Not me. This gluten free focaccia bread is the answer! It’s quick, it’s versatile and you can put it out with party fare. The holiday season just got easier. You’re welcome.
In addition to party fare, I’m looking forward to trying this bread out for paninis. I think it would work really well in a press and I can’t wait to get some ooey goey cheese panini action happening. I’m pretty excited about it and the more I think about it, the more possibilities I see. I hope you try this gluten free focaccia bread recipe out. It uses a 1/2 cup of Sabra’s Pico de Gallo salsa. I chose this one because it is nice and fresh and I love all the onion in it. You could use your favorite though, I bet Mango Peach would be really good!
- 1 cup oat flour
- ½ cup light buckwheat flour
- ¼ cup potato starch
- ¼ cup tapioca starch
- 1 tsp baking powder
- ½ tsp salt
- 2 tbsp oil (I used coconut oil)
- ½ cup water
- ½ cup salsa
- ½ cup shredded cheddar cheese
- Pre-heat oven to 350 degrees
- Line a cookie sheet with parchment paper.
- Mix all the dry ingredients and stir with a fork to get the lumps out.
- Add the water and salsa and stir well until batter is smooth and salsa is mixed through.
- Pour batter onto prepared cookie sheet and smooth out into an oval about 8" long and 6" wide.
- Sprinkle cheddar over the top
- Bake 20 min or until slightly browned around the edges
Just look at all those nooks and crannies to sop up whatever you put out for dipping. I really do hope you try this out and I hope you also get creative. You could also add chunks of chopped olive, a different cheese blend, herbs and spices or whatever strikes your fancy. This is going to be my go-to quick bread from now on. I can’t get over how easy it is to make!
