I partially made this recipe because it’s a quick and easy gluten free peanut butter cookie recipe, and man, I like peanut butter cookies. And I partially made this recipe to show off the vintage cookie jar my sister gave me for Christmas. It’s awesome AND useful and I love the things I collect to be useful in everyday life. Isn’t it pretty? I love the colouring, it’s like it screams out to be stuffed to the rim with peanut butter cookies. So naturally, that’s what I did.
This is the sort of recipe that you can whip together if you have a gluten sensitive person coming to tea because it’s made with a box of cake mix. The beauty of it is that you can grab a box of gluten free Our Compliments cake mix at any Safeway or Sobeys location and you won’t have to make a trip to health food store for a bunch of specialty ingredients that you’ll never use up. Grab a few to keep on hand – the rest of the ingredients are staples you’ll have in your fridge anyway. These peanut butter cookies come together so quickly, you can have them mixed, baked and the bowl washed and put away in 20 minutes flat.
I added peanut butter chips to these but if you don’t have them in the pantry, you could do without and still have an awesome cookie. These came out crisp on the edges and chewy in the middle and if you ask me, that’s how the perfect cookie should be. A little crunchy, a little chewy and a lot of decadence hits all the marks for me. Here’s the recipe:
Keep a box of gluten free cake mix on hand and you’ll always have what you need to make these simple and easy cookies. Preheat oven to 350 Add the cake mix to a large bowl and stir in all other ingredients. Mix until well incorporated. Drop dough by tablespoon onto a cookie sheet leaving a 2" space between each cookie Bake for approx 12 min until slightly browned on the bottom.
